Zucchini Corn Spinach Fritters/Bhajiyas/Pakoras

*Corn Zucchini Fritters/Bhajiyas Recipe*


1 C grated zucchini
1 C whole fresh or fozen corn
1C fresh chopped spinach or greens of your choice
1 C raw grated potato
1 C thinly sliced onion
1/4 C oat flour or rolled oats
1/4 C rice flour
1 TBS roasted cumin
1-2 TBS Chopped jalapeno or green chillies, adjust to taste
1/4 C Chopped Cilantro
2 sprigs finely chopped curry leaves, available in Indian Grocery stores
1 tsp salt

Mix all until uniformly combined. Let sit for 5 mins. not more. Add 1 tsp of water at a time if needed only.

Take about 1/4 C portions and pat into thickish cutlet shaped patties. Do not pack them too tight.

Bake or airfry at 400F on a silicone mat (Silpat) for 15 mins then steps of 5 mins until golden brown. Broil for 1 min or 2 mins if required. Flip patties and repeat the baking. Baking time varies from oven to oven.

Crispy and excellent! Makes a great snack or party food.
Serve with spicy coriander chutney or ketchup or sriracha sauce or your favorite dipping sauce!
