Thai Basil Fried (oil free)

Thai Basil Fried Rice – No oil Recipe

  1. Vegetables – see options below
  2. Spice Mixture – see below for ingredients
  3. Tofu – 1 block organic tofu
  4. Brown Rice – 1 C, cooked
  5. Thai Basil – 1 big bunch
  1. Vegetables: Use veggies of your choice and availability.
    Broccoli
    Onions
    Cabbage – green or purple
    Carrots
    Zucchini
    Yellow squash
    Snowpeas
    Baby corn
    Green, yellow, orange, red bell peppers
    Bokchoy or Greens of your choice – optional

2. Spice mixture:
1/2 C Soy sauce
2 TBS Finely ground thai green chilies
3 TBS Finely chopped garlic
2-3 TBS Sriracha sauce (optional)

3. 1 block Extra firm Organic Tofu
Coat extra firm Tofu cubes in the above spice mixture. Broil high in oven for 5 minutes, until slightly crispy (add 1 min at a time until edges are firm and crispy). Flip tofu pieces and airfry/broil 5 mins. Alternately Pan fry with no oil on medium heat until edges are crispy.

Method:

Coat each cut vegetable with spice mixture and broil high for 2-5 mins until cooked yet crunchy. Or saute vegetables individually in thick bottomed steel wok or kadai. Set aside.

Flavor cooked and cooled brown rice with spice mixture for 5-10 mins in a stainless steel pan or wok until spices incorporated and rice if flavored

Combine everything – Vegetables + Flavored rice + roasted tofu.
Serve with lots of freshly chopped thai basil leaves and lime wedges.
Sprinkle coarsely powdered roasted peanuts.
