Loaded Nacho Supreme or Taco Salad (Includes Pico de gallo & Guacamole)

My signature Taco Salad, Pico de gallo and Guacamole

Ingredients:

Mexican Taco Salad:

  • 1 head Dark Green Romaine Lettuce (Shredded) or organic baby spinach or organic spring mix
  • 1 each Grated, Carrot, Jicama, Beetroot, Turnips, Radish (any Combination)
  • 1 each Chopped, Red, Yellow, Green Bell Pepper
  • 1 English Cucumber, diced
  • 1 ½ cups cooked Black Beans (cooked or 1 can)
  • 2 cups of Corn (optional)
  • 2 Vine ripe tomatoes, chopped
  • Other veggies of your choice

Guacamole:

  • Scoop out Ripe Avocadoes using a spoon
  • ½ Red Onion finely diced
  • Diced Pickled Jalapeño or Diced Fresh Jalapeño to taste
  • Chopped Cilantro
  • Lime or Lemon juice to taste
  • Minced Garlic 1-2 pods (to taste)
  • Salt to taste
  • Halved Cherry Tomatoes (Optional)

Salsa or Pico de gallo:

  • 1 Can Organic Petite Diced Tomatoes (28 oz.) or fresh Vine Ripe tomatoes
  • ½ Red Onion finely diced
  • 1 C steamed corn
  • 1 C Black beans
  • Diced Pickled Jalapeño or Diced Fresh Jalapeño to taste
  • Chopped Cilantro
  • Lime or Lemon juice to taste
  • Minced Garlic 1-2 pods (to taste)
  • Chopped Green Onions (optional)
  • Salt to taste
  • Add Black beans or Corn or Peach or Mango or Pineapple (Optional)

Plant based crumble: (substitute for beef crumbles):
1/4 C Bulgur wheat (#3 grade) (use Polenta for GF option)
1/4 C Water
1 C Salsa or Pico de gallo from above

Oil free Corn Tortillas:
Buy Corn tortillas that have the least number of ingredients preferably corn, lime, water.
Cut tortillas into 1/6th sized triangular pieces.
Bake in the oven on a baking sheet at 400F for 10-15 mins until cripy and golden brown.

Instructions:

  1. Mix all Taco Salad ingredients & chill
  2. Serve over a bed of oil free Tortillas or oil free Corn Chips (optional)
  3. Guacamole: Mix all ingredients & chill
    Add one pit of an Avocado
    Make a couple of hours ahead so all flavors can blend
  4. OR just add scoops of ripe avocadoes on top, just before serving
  5. Salsa: Mix all ingredients & chill
    Make a couple of hours ahead so all flavors can blend
    Make sure the Tomatoes (either fresh or canned) are finely diced
  6. Combine all ingredients for Guacamore. Set aside.
  7. Combine all ingredients for the Bulgur wheat crumbles. Set aside.
  8. Assemble Taco Salad or Loaded Nacho Supreme:
    on a bed of salad, add home made oil free corn chips, add a layer of Plant based crumbles, then a layer of Salsa or pico de gallo. Top with Guacamole or avocado pices.
  9. Serve with Plant Based Queso.
