Garam Masala – a spice blend

[Garam masala is an Indian spice blend of some of the most flavorful spices from India. India was well known for centuries for its spice trade and use of spices to flavor everyday foods. This recipe is from a very good friend of mine who gave me a big jar of Garam Masala and the recipe too. Thanks Fagoon!]

1/2 cup coriander seeds
1/4 cup cumin seeds
2 tablespoon green cardamoms
2 tablespoon cloves
1 tablespoon pepper corns
2 inch 6 to 8 pieces cinnamon
1 tablespoon saunf (fennel seeds)
1/2 nutmeg
2 star anise
4 black cardamoms
3 strands mace (javintri)
4 bay leaves


  1. Sun dry for a day, then roast on very low heat till aroma imparts, cool and grind to a fine powder.
  2. Store in jar in the fridge.
  3. Mix all the ingredients in a large mixing bowl until well combined.
