Garam Masala – a spice blend
Garam masala is an Indian spice blend of some of the most flavorful spices from India. India was well known for centuries for its spice trade and use of spices to flavor everyday foods. This recipe is from a very good friend of mine who gave me a big jar of Garam Masala and the recipe too. Thanks Fagoon!
Ingredients
- 1/2 C coriander seeds
- 1/4 C cumin seeds
- 2 tsp green cardamoms
- 2 tsp cloves
- 1 tsp pepper corns
- 2 inch 6 to 8 pieces cinnamon
- 1 tsp saunf (fennel seeds)
- 1/2 nutmeg
- 2 star anise
- 4 black cardamoms
- 3 strands mace (javintri)
- 4 bay leaves
Instructions
- Sun dry for a day, then roast on very low heat till aroma imparts, cool and grind to a fine powder.
- Store in jar in the fridge.
- Mix all the ingredients in a large mixing bowl until well combined.
