Tofu Scramble with Toast or oil free parathas or pita bread
This healthy 15 minute vegan recipe is packed withprotein and tons of veggies.
Ingredients
- 1 block Extra Firm Tofu
- Onion
- Carrots
- Green onion
- Broccoli
- Zucchini
- Yellow squash
- Orange bell pepper
- Yellow bell pepper
- Red bell pepper
- Green bell pepper
- All finely diced
Spices & Flavorings:
- Ginger
- Green chilis
- Roasted cumin
- Black Pepper powdered
- Line/lemon
- Cilantro
- Optional: Add a cup of cooked black beans
Instructions
- Finely dice all veggies.
- Sauté onions using one Tablespoon of water to deglaze the pan. Cover and sauté until slightly golden brown.
- Add ginger & green chilis or jalapeños, finely diced. Add turmeric powder.
- Add veggies & sauté in order of cooking time.
- Remove water, squeeze extra water & Crumble Extra firm Tofu. Add to Veggie mixture. Sauté for 2 mins.
- Add black pepper, salt, lime juice, chopped cilantro.
Notes
Serve with Toast or pita or homemade oil free parathas! Enjoy!
