Brown Lentil Veggie Pulav & Raita
A delicious, heart-healthy, one-pot rice meal recipe.
Pulav
- 1 Cup Brown Basmati Rice (soaked for 1/2 hr.)
- 1 Cup Brown lentils (soak for 2-4 hrs)
- 2 Cups diced mixed veggies
- 2 Cups Water
- Salt to taste
Whole Spices
- 1 Bay leaf
- 1 teaspoon Cumin seeds
- 1 Stick Cinnamon
- 2 Cardamoms
- 2 Cloves
- 4-6 Black pepper corn
- Or 2 teaspoons Garam Masala
Plant Based Raita Recipe
- 2 cups plant based yogurt
- 1 cup cucumber (finely diced or grated)
- A pinch jeera powder
- A pinch chilli powder
- ½ bunch chopped cilantro
- Salt to taste
- Dry roast the spices – whole or roughly ground for a couple of mins in a 4Q pan or in saute mode in an Instant Pot.
- Add the soaked Rice and Lentils. Add the water and salt.
- Add the diced veggies
- Set IP to high pressure for 4 mins Natural Release.
- After the pressure is released let it sit for 10 mins.
- Transfer to a large mixing bowl and toss to mix. Do not overmix or mix with a ladle – it will turn mushy if you overmix.
Plant Based Raita
- Mix all the ingredients to make Raita. Serve with viggie pulav!!!
Note: Use whole green moong or any small lentil.
