Carrot-Oat Squares
Carrot-Oat Squares are wholesome vegan treats bursting with the natural sweetness of carrots and hearty oats, providing a nutritious and satisfying snack or dessert option. These squares are oil-free, making them a guilt-free indulgence for those seeking a healthier alternative.
Ingredients
- 2 cups Rolled Oats
- 1 cup Grated Carrots
- 3-4 Ripe bananas mashed
- 1 Apple puréed
- 2 tsp Cinnamon
- 1/2 cup Walnuts or pecans crushed
- 2 Tablespoons Raisins
Instructions
- Preheat oven to 350 F (180C).
- Add all the ingredients and mix until well combined.
- Pour into a glass or ceramic baking dish.
- Spread evenly.
- Bake for 25-30 mins or until golden on top.
- Once cooled cut into squares.
Notes
Options:
- Flavor with cardamom instead of cinnamon.
- Purée a small clementine, alond with the apple purée.
- Flavor with juice of 1 lemon and lemon zest.
