Ingredients
  

For the Sauce:

  • 1 potato peeled
  • 1 carrot
  • 1 onion
  • 4-5 garlic cloves
  • 1/2 cup cashews or more for extra creaminess
  • 1/4 cup nutritional yeast
  • 1/4 tsp turmeric
  • 1/2 tsp smoked paprika optional, for a smoky flavor

For the Topping:

  • Bread crumbs
  • Salt
  • Nutritional yeast
  • Italian seasoning

For Serving:

  • Steamed broccoli

Instructions
 

  • Steam the potato, carrot, onion, garlic cloves, and cashews until tender.
  • Transfer the steamed ingredients to a blender.
  • Add nutritional yeast and turmeric.
  • Blend until smooth, adding water as needed to achieve your desired consistency.
  • For a smoky twist, blend in the smoked paprika.
  • Cook your favorite macaroni pasta according to package instructions. Drain and set aside.
  • Mix the creamy sauce with the cooked macaroni.
  • Preheat the oven to 375°F (190°C).
  • Transfer the mac & cheese into a baking dish.
  • In a bowl, combine bread crumbs, salt, nutritional yeast, and Italian seasoning.
  • Sprinkle the bread crumb mixture evenly over the mac & cheese.
  • Bake for 10-15 minutes, or until the topping is golden and crispy.
  • Serve warm, garnished with steamed broccoli for a perfect pairing.
