Creamy Mac N Cheese
Mac n Cheese is a classic comfort dish elevated with a vegan twist, featuring acreamy cashew-based sauce that satisfies cravings without sacrificing flavor ortexture.
Ingredients
For the Sauce:
- 1 potato peeled
- 1 carrot
- 1 onion
- 4-5 garlic cloves
- 1/2 cup cashews or more for extra creaminess
- 1/4 cup nutritional yeast
- 1/4 tsp turmeric
- 1/2 tsp smoked paprika optional, for a smoky flavor
For the Topping:
- Bread crumbs
- Salt
- Nutritional yeast
- Italian seasoning
For Serving:
- Steamed broccoli
Instructions
- Steam the potato, carrot, onion, garlic cloves, and cashews until tender.
- Transfer the steamed ingredients to a blender.
- Add nutritional yeast and turmeric.
- Blend until smooth, adding water as needed to achieve your desired consistency.
- For a smoky twist, blend in the smoked paprika.
- Cook your favorite macaroni pasta according to package instructions. Drain and set aside.
- Mix the creamy sauce with the cooked macaroni.
- Preheat the oven to 375°F (190°C).
- Transfer the mac & cheese into a baking dish.
- In a bowl, combine bread crumbs, salt, nutritional yeast, and Italian seasoning.
- Sprinkle the bread crumb mixture evenly over the mac & cheese.
- Bake for 10-15 minutes, or until the topping is golden and crispy.
