Fresh Pickle with Pickle Masala is an Indian spice mix that is used to make pickles. My amma's authentic pickle powder adds a burst of traditional flavor to every dish.

Ingredients
  

  • 1 cup Byadige Chillies for color - a variety of red chillies for thier vibrant color.
  • ¼-½ cup Dry Red Chillies for spice
  • 1/4 cup Methi (Fenugreek) seeds
  • 1/2 cup Mustard seeds
  • 1 tablespoon Turmeric Powder
  • ⅛-¼ tsp Hing (Asafoetida) Powder
  • 1-3 teaspoons Salt

Instructions
 

Dry Roast all spices individually:

  • Dry roast chillies for about 5 minutes. Watch carefully so it doesn’t burn
  • Dry roast Methi (Fenugreek) seeds for 2 to 3 minutes
  • Dry roast Mustard seeds
  • Add Turmeric Powder and Hing (Asafoetida)
  • Grind to a fine powder
  • Authentic amma’s pickle powder is ready.

Notes

  • Pick your vegetables or green apples or green mango, finely diced. Option of vegetables: Carrots, jalapenos, cauliflower, turnips, red cabbage, etc.
  • Finely dice vegetables or green apples
  • Add juice of lime (to taste, optional)
  • Add Pickle Masala
  • Adjust spices and salt
  • Add dry roasted mustard seeds
Serve with any dish that needs an extra kick of spices. Especially with khichadi, upma, poha, with rotis too.
Add yogurt to make a Raita too!😋
