Lettuce Boats with Creamy Sauce
A very refreshing complete meal for summer.You cannot overeat this crunchy meal as it is well-balanced meal as well asleaves you satiated and beckons you for seconds and thirds. It hits all thetastebuds! ENJOY!
Ingredients
For Grains:
- 1 Cup Brown Rice cooked
- 1 Lime Juice
- 1/4-1/2 cup Cilantro chopped
For Salad:
- 1 head Romaine Lettuce
- 1 cup garbanzo beans cooked (or rinsed canned beans)
- Cherry Tomatoes halved
- Red Onion sliced
- Greens chopped
- Cucumber chopped
- Zucchini diced
- Yellow Squash diced
- Jicama diced
- Red Radish diced
- Colored peppers diced
- Your Choice of raw veggies
Creamy Ranch:
Combine in a blender:
- 3 large cauliflower florets
- 2 tablespoons Apple cider vinegar
- 2 cloves Garlic
- 1 Lemon zested and juice
- Chickpea water – from 2 cans
- ¾ teaspoon Salt flake
- ¾ teaspoon Black pepper
- 1/4 cup tablespoons Ranch Nutritional Beast
Instructions
- Cook brown rice and mix with lime juice, chopped cilantro and salt, set aside
- Mix all the salad ingredients together to make a colorful salad, set aside.
- Make creamy ranch dressing, set aside.
- Assemble by taking 1 lettuce boat, add 2 tablespoons of cilantro-lime rice, garbanzo salad, top with creamy ranch and serve cold.
- ENJOY! Eat as many as you wish until full!
Notes
Ranch Nutritional Beast Recipe:
- Nutritional Yeast: 2 cups
- Garlic Powder: 1 TBS
- Onion Granules: 1 TBS
- Onion Powder: 1 TBS
- Parsley: 1 TBS
- Dill: 1 TBS
- Thyme: 1 tsp
- Salt: about 1 tsp
- Pinch starch
- Mix all to make Ranch Nutritional Beast Mix.
