Black Bean Stacked Quesadilla

Ingredients
  

Base:
  • 1 packet organic corn tortillas or any tortillas
Flavorings:
  • Taco seasoning
  • Jalapeños
  • Lime
  • Salt
Bean layer:
  • 1 can refried beans OR 1 can organic black beans mashed + 1 tbsp taco seasoning
Vegetable salsa layer (Veggies can be customized):
  • Store-bought salsa or homemade
  • 1 can black beans
  • Corn
  • Chopped bell peppers
  • Zucchini
  • Yellow squash
  • Cilantro
  • Juice of 1 lime
  • Jalapeños
  • Salt
Protein layer:
  • 1 packet extra-firm tofu crumbles
  • Taco seasoning
  • Cilantro
  • Greens optional

Method
 

  1. Start with Organic Corn Tortillas cut in half. Arrange a layer in a baking pan (9x13).
  2. Spread a layer of refried beans (flavor well).
  3. Spread a layer of Tofu mixture.
  4. Spread a layer of Salsa + whole black beans + Veggies + crumbled Tofu (flavor each layer).
  5. Repeat step 1, 2, 3 & 4.
  6. Layer until all the fillings are used up.
  7. Bake at 3500 for 30-40 minutes. Allow to cool completely before slicing.
  8. Garnish: Serve with optional toppings like more salsa, diced avocado, or chopped cilantro!
