Carrot-Oat Squares are wholesome vegan treats bursting with the natural sweetness of carrots and hearty oats, providing a nutritious and satisfying snack or dessert option. These squares are oil-free, making them a guilt-free indulgence for those seeking a healthier alternative.

Ingredients
  

  • 2 cups Rolled Oats
  • 1 cup Grated Carrots
  • 3-4 Ripe bananas mashed
  • 1 Apple puréed
  • 2 tsp Cinnamon
  • 1/2 cup Walnuts or pecans crushed
  • 2 Tablespoons Raisins

Method
 

  1. Preheat oven to 350 F (180C).
  2. Add all the ingredients and mix until well combined.
  3. Pour into a glass or ceramic baking dish.
  4. Spread evenly.
  5. Bake for 25-30 mins or until golden on top.
  6. Once cooled cut into squares.

Notes

Options:
- Flavor with cardamom instead of cinnamon.
- Purée a small clementine, alond with the apple purée.
- Flavor with juice of 1 lemon and lemon zest.
