Crispy Crust RED LENTIL BREAD No Yeast | Gluten Free | Super Healthy and Easy

Ingredients
  

  • 2 cups dry red lentils soak minimum 1-2 hrs
  • 1/4 cup psyllium powder
  • 1 tablespoon baking powder
  • 1 tablespoon baking powder
  • Salt to taste
Spices:
  • ~2 cups Greens of your choice - kale or spinach or chard or collard greens
  • ~2-3 carrots finely diced or combo of beets & carrots
  • 1 Tablespoon fennel seeds
  • 1 Tablespoon sesame seeds
  • 1 Tablespoon ginger finely diced
  • 2-3 Jalapenos finely diced
Topping:
  • 1 tablespoon Pumpkin seeds or sesame seeds or black sesasme seeds topping

Method
 

  1. Grind the soaked lentils and all the ingredients into a coarse paste, using a stick blender or food processor with an S-blade
  2. Transfer into a loaf pan lined with parchment paper
  3. Don’t pack it too tight, use a fork to push dough into corners; to create air pockets
  4. Top with pumpkin seeds and press them down; if not they will fall off once baked
  5. Bake for 1 hour at 350 F (175C)
  6. Allow to cool for 1/2 hr. Remove from pan and dry on a cookie cooling rack
  7. Let it cool completely before cutting.
  8. Toast slices until crispy and ENJOY!
  9. ⁠Top with mashed avocado or hummus
  10. ⁠Use lentil bread slices to make open faced sandwiches

Notes

1. Herbs: Rosemary or dill or basil or parsley or cilantro (optional)
2. Add chopped herbs, finely chopped onions, etc.
3. Slice and freeze; transfer to a ziplock bag and thaw & toast until crispy.
