Lemon Rice

A very popular and flavorful Indian dish – Lemon Rice iseveryone’s favorite. It is very easy to put together with ingredients youalready have in your pantry. Served with Raita, it makes a complete meal.

Ingredients
  

  • 1 Cup Brown Basmati Rice or any short grains like Millet Quinoa or Oat Groats, etc.,
  • 1/4 teaspoon Turmeric
  • 2 Cups Mixed Veggies diced
  • 8-10 Curry leaves finely diced
  • 1 Green Chilli slit
  • 1 tsp Ginger finely diced
  • 1 tsp Chana dal dry roasted
  • 2 1/4 Cups Water
  • Salt to taste
Seasonings/Garnish:
  • 1 tsp dry roasted Mustard Seeds
  • 1 tsp dry roasted Urad dal
  • Juice of 1 full lime
  • 1/2 cup Chopped Cilantro
  • 2 TBS dry roasted peanuts

Method
 

  1. Add all the ingredients to a pan or Instant Pot.
  2. In 4Q Pan: Cover and cook for 15 mins on med. high. Once all the water is absorbed (no more water remains above the surface of the rice) reduce heat to low and allow to cook for 10 mins.
  3. In Instant Pot: Cook on High Pressure for 5 mins. Let it rest for 5 mins. and release pressure. Remove inner stainless-steel pot and set aside to cool for 20 mins. Transfer to a serving bowl and ensure veggies are mixed uniformly. Do not mix when rice is hot. It will become sticky.
  4. Add all the seasonings/garnish.
  5. Mix all the ingredients to make Raita.
  6. Serve Lemon Rice with Raita!!!

Plant Based Raita Recipe
  • 2 Cups Plant Based Yogurt
  • 1 Cup Cucumber, finely diced or grated
  • A pinch Cumin Powder
  • A pinch Chili Powder (optional)
  • 1/2 bunch chopped Cilantro
  • Salt to taste
Instructions:
Mix all to make Raita. Serve with Lemon Rice!!!
