Add diced onions in a stainless steel 3Q pan or in an Instant Pot. Saute for 3-8 mins adding a tablespoon of water at a time to deglaze the pan. Add Garlic and saute for 1 min.
Add all the rest of the ingredients .
For stove top cooking: Cover and cook on medium heat for about 10 mins. Once the water reduces to the top of the rice, lower heat to low and cook for another 15-20 mins. Let sit for 10 more mins.
For Instant Pot: Cover and set to Manual 5 mins. Let it rest for 5 mins and quick release.
Fluff with a fork to serve. (Do not overmix - it will become sticky)
