Naturally Sweetened Healthy Orange Fruit Cake

Ingredients
  

Dry Ingredients:
  • 2 cups rolled oats
  • cup Medjool dates about 15, pitted
  • tsp baking powder
  • 1 tsp baking soda
Wet Ingredients:
  • 1-2 mandarin oranges Cuties, whole
  • 2 apples chopped
  • 2 ripe bananas
  • 2 cups blueberries optional
Chocolate Sauce (Optional)
  • 1 tbsp cacao powder
  • 1 tbsp maple syrup

Method
 

  1. Blend oats, dates, baking powder, and baking soda in a food processor until flour-like. Transfer to a mixing bowl. Fold in blueberries and set aside.
  2. In the same processor, blend all wet ingredients until smooth.
  3. Pour the wet mixture into the dry ingredients and gently fold until fully combined.
  4. Transfer the batter to a greased 8×8 pan or Bundt pan.
  5. Bake at 350°F (180°C) for 45 minutes, or until a toothpick inserted comes out clean.
  6. Drizzle with chocolate sauce if desired. Slice and enjoy!
