WFPB Restaurant Style Palak Tofu

Saag paneer is made with other leafy greens (such as mustard greens).

Ingredients
  

  • 1 block extra firm Tofu cubed
  • 2 bunches Spinach
  • 1 small Onion finely diced
  • 1 Tomato finely diced
  • 1 ” Ginger finely diced
  • 4 pods Garlic finely diced
  • Juice of ½ Lime optional
  • Salt to taste
Spices:
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ tsp garam masala powder

Method
 

  1. In a large pan on medium-high heat, add ½ cup water, onion, garlic, ginger and spinach. Cover and cook for 5–8 mins, until spinach wilts.
  2. Cool slightly and blend to desired texture with an immersion blender
  3. Add spices, salt and stir in Tofu cubes
  4. Allow to simmer for 2-4 mins
  5. Turn off heat and add lime juice if desired.
  6. Enjoy with roti, naan, or brown rice.

Notes

NOTE: Use more spinach to other greens ratio so as to not make it too bitter. Or remove stems to prevent from becoming bitter.
