Quinoa Upma & Chutney

Quinoa upma is a nutritious, hearty upma variant made with nutty quinoaseeds, vibrant seasonings and heathy mixed veggies. Make it for breakfast orbrunch!

  • 1 cup Quinoa
  • 1 cup Green beans (diced,)
  • 1 cup Green peas
  • 1 cup Carrots (diced)
  • 1 Tablespoon Ginger (Finely diced)
  • 1-2 Green Chillies (Finely diced)
  • Few Curry leaves
  • 1 Lime
  • Cilantro
  • Salt to taste

Mini Colored Pepper Chutney:

  • Airfry or bake papers at 350F for 10-12 mins
  • 1 Tablespoon Chana dal (dry roasted)
  • 1 Tablespoon Urad dal (dry roasted)
  • 1 Teaspoon Cumin (dry roasted)
  • 1 Teaspoon soft tamarind (pits removed)
  • 2-5 Red Chilis (dry roasted)
  • 1 bunch cilantroi
  • a pinch of hing

10 min recipe in IP:

  1. Add Quinoa with 1:2 water along with a hint of turmeric & salt to inner pot of IP. Use a steamer and add beans, peas, carrots.
  2. Add 1 Tablespoon Ginger, finely diced.
  3. Add 1-2 Green chilis, finely diced.
  4. Add few curry leaves (optional).
  5. Close IP and steam for High Pressure, 2 mins.
  6. Once time is up, allow to sit for 5 mins and Quick Release (QR) Pressure.
  7. Allow to cool completely! Fluff with a fork!
  8. Add juice of 1 lime or 1 lemon.
  9. Add salt to taste,  chopped cilantro and dry roasted seasoning.
  10. Serve with chutney!

Instruction for Chutney: Grind to a coarse paste

  1. Serve as a dip with veggie sticks or with upma!!!!
