Buddha Bowl

Build your own Buddha Bowl. This buddha bowl recipe is super fresh,delicious and versatile! The rice and veggies and dressing can be made inadvance and stored in the refrigerator.

  • Quinoa: 1 cup

Lentils

  • Masoor Dal (Red Lentils or)
  • Green Mung Dal or
  • Beluga Lentils: 1 cup

Salad Ingredients

  • Vegetables of your choice (e.g., cucumbers, tomatoes, carrots, bellpeppers)

Greens

  • Spinach like kale, or any leafy greens (optional to stem gently)

Hummus Ingredients

  • Cooked Garbanzo Beans (Chickpeas: 1 cup)
  • Tahini: 2 tablespoons
  • Garlic: 1-2 cloves
  • Lemon: 1 (juiced)
  • Salt: To taste
  1. Cook 1 cup Quinoa with 2 cups water

  2. Cook ⁠1 cup lentils (Masoor dal or green mung dal or beluga lentils) with 2.5 cups water.

  3. Make salad of your choice and add greens (steam gently if desired).
  4. Make hummus (cooked garbanzo, tahini, garlic, lemon, salt).
  5. Assemble Buddha bowl!!!

Optional: Add salsa, chutney, oil free pesto etc.

Substitute different lentils and substitute different grains!
