A wholesome, oil-free apple carrot oat cake packed with fruits, warm spices, and natural sweetness for a nourishing plant-based treat.

Ingredients
  

  • 3 cups oat flour
  • ½ –1 cup plant-based milk adjust as needed
  • 2 large apples grated
  • 2 large carrots grated
  • ½ cup raisins
  • ½ cup chopped dates
  • ½ cup chopped dried apricots
  • ½ cup chopped dried figs
  • ¼ cup desiccated coconut
  • 1 tsp vanilla extract
  • 1 tbsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp fine sea salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup chopped walnuts or almonds optional

Method
 

Preheat the Oven
  1. Preheat the oven to 350°F (175°C). Line an 8-inch round or square baking pan with parchment paper, or use a bundt pan. Lightly dust with oat flour.
Prepare the Dry Ingredients
  1. In a bowl, mix oat flour, cinnamon, nutmeg, salt, baking powder, and baking soda. Add the desiccated coconut and chopped nuts if using.
Combine the Wet Ingredients
  1. In a large bowl, combine the grated apples, grated carrots, raisins, plant-based milk, and vanilla extract.
Prepare the Batter
  1. Gradually fold the dry ingredients into the wet mixture. Mix gently until well combined. If the batter feels too thick, add a little more plant-based milk.
Bake
  1. Pour the batter into the prepared pan and spread evenly. Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the cake to cool for 10–15 minutes before slicing and serving. Enjoy!
