Healthy Fruit Cake
A wholesome, oil-free apple carrot oat cake packed with fruits, warm spices, and natural sweetness for a nourishing plant-based treat.

Preheat the Oven
- Preheat the oven to 350°F (175°C). Line an 8-inch round or square baking pan with parchment paper, or use a bundt pan. Lightly dust with oat flour.
Prepare the Dry Ingredients
- In a bowl, mix oat flour, cinnamon, nutmeg, salt, baking powder, and baking soda. Add the desiccated coconut and chopped nuts if using.
Combine the Wet Ingredients
- In a large bowl, combine the grated apples, grated carrots, raisins, plant-based milk, and vanilla extract.
Prepare the Batter
- Gradually fold the dry ingredients into the wet mixture. Mix gently until well combined. If the batter feels too thick, add a little more plant-based milk.
Bake
- Pour the batter into the prepared pan and spread evenly. Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Cool and Serve
- Allow the cake to cool for 10–15 minutes before slicing and serving. Enjoy!
