Mango Black Rice Pudding

A favorite Indian dessert – Rice Kheer or Rice Pudding is afavorite among kids and adults alike. Enjoy an easy version of the same.

  • 1 cup uncooked black rice
  • 2 cups water
  • 1/2 cup coconut milk or coconut cream
  • 1/4 cup brown sugar (or sweetener of your choice, adjust to taste)

Toppings:

  • Optional toppings: diced fresh fruit like mango pieces (additional coconut sugar, nuts like slivered almonds and cashews, raisins, cinnamon, cardamom powder)
  1. In a small saucepan, combine the rice, coconut milk, and water.
  2. Bring to a boil over medium high heat for 10 mins; reduce heat and simmer uncovered, for 20 – 30 minutes until a majority of the liquid is absorbed, the rice is plumped and tender, and the mixture is thickened into a pudding consistency. (Add more coconut milk, as needed, if the liquid is absorbed but the rice is not yet plumped and tender).
  3. Remove from heat and stir in sweetener to taste.
  4. Serve hot, warm, or cold, with any or all of the optional toppings!
