One-Pot Green Pulav

 

One-Pot Green Pulao

A very popular and flavorful Indian main dish - Pulao is everyone’s favorite. It is an one pot dish, is easy to put together and is nutritious. Served with Raita.

Ingredients
  

  • 1 cup brown basmati rice soaked for 4 hrs.
  • 1 cup brown lentil soaked for 4 hrs
  • 1/4 cup onion sliced
Grind to make a green paste of:
  • 2 cups Spinach/mint/any greens
  • 1 tablespoon ginger chunks
  • 1/2 a medium onion chunks (optional)
  • 2 cloves garlic (optional)
  • 2 green chillies/jalapenos/green bell pepper to taste
  • 2 cloves
  • 1 cardamom
  • 1 piece cinnamon
  • 5-6 whole black pepper
  • 1 bay leaf
  • Salt to taste
  • 2 cups water
  • 4 cups Any diced vegetable of your choice
  • 4 cups water
  • Topping optional: Garnish with chopped cilantro, cahsews and raisins

Method
 

  1. Mix all the ingredients together in an instant pot and cook for 2 minutes on high pressure. Open after 5 minutes.
  2. For stove-top cooking, bring all ingredients to a boil in a 5Qt pan.
  3. Once the water reaches the top of the rice, reduce heat to a simmer, cover, and cook until all water is absorbed (about 10mins). Turn off heat, let sit for 10 mins, covered.
  4. Garnish with chopped cilantro, cashews, and raisins.
  5. Serve hot with plant-based raita on the side.
