One-Pot Green Pulao

A very popular and flavorful Indian main dish – Pulao is everyone’s favorite. It is an one pot dish, is easy to put together and is nutritious. Served with Raita.

  • 1 cup brown basmati rice (soaked for 2 hrs.)
  • 1 cup brown lentil (soaked for 2 hrs)
  • 1/4 cup onion (sliced)

Grind to make a green paste of:

  • 1 teaspoon ginger (chunks)
  • 1 clove garlic
  • 1½ cup spinach/mint
  • 2 green chillies/jalapenos/green bell pepper (to taste)
  • 2 cloves
  • 1 cardamom
  • 1 piece cinnamon
  • 1 bay leaf
  • Salt to taste
  • 2 cups water
  • Topping optional: 2 tablespoons dry roasted cashew nuts and raisins
  1. Mix all the ingredients together in an instant pot and cook for 2 minutes on high pressure. Open after 5 minutes.
  2. Alternatively, mix all the ingredients together in a slow cooker and cook for 6 hours on low.
  3. For stove-top cooking, bring all ingredients to a boil in a 3Qt pan.
  4. Once the water reaches the top of the rice, reduce heat to a simmer, cover, and cook until all water is absorbed (about 10mins). Turn off heat, let sit for 10 mins, covered.
  5. Garnish with chopped cilantro, cashews, and raisins.
  6. Serve hot with plant-based raita on the side.
