Thai Basil Fried Rice (oil free)

A fragrant, wholesome dish made with brown rice, fresh vegetables, and Thai basil, stir-fried without oil yet bursting with authentic spicy-sweet flavors.

Ingredients
  

Brown Rice:
  • 1 cup cooked brown rice
Tofu:
  • 1 pkg Organic Extra Firm Tofu cubed
Vegetables:
  • 1 head broccoli florets
  • 1 large carrot thinly sliced
  • 1/2 green bell pepper cut into strips
  • 1/2 red bell pepper cut into strips
  • 1/2 yellow bell pepper cut into strips
  • 1/2 orange bell pepper cut into strips
  • 1 cup purple cabbage cut into strips
  • 1 cup green cabbage cut into strips
  • Handful Snow peas
  • 1 can baby corn
  • 1 cup shelled edamame
  • 1 onion slivered
  • Other veggies of your choice
Spicy sauce mix:
  • 4-5 Thai green chilies finely chopped or chili garlic sauce
  • 3 cloves Garlic finely chopped
  • 1 lime Zest and juice
  • Soy Sauce 1 tsp for each vegetable or liquid Aminos
Garnish
  • 1 bunch green onions chopped
  • 1 big bunch fresh thai basil finely chopped
  • 1 Tablespoon Toasted sesame seeds

Method
 

  1. Preheat oven to 350F. Roll cubes of tofu in the spicy sauce and bake for 10-15 mins until edges are firm. Set aside.
  2. Water saute each vegetable separately since cooking times are different along with spicy sauce mix. Set aside.
  3. Make enough sauce for brown rice and water saute the rice for a few minutes.
  4. Add all the rice and veggies and toss in baked & seasoned tofu, chopped basil, scallions, and sesame seeds (optional) at the end. Eat cold or hot.
  5. Serve with green papaya salad and peanut lime dressing.
  6. ENJOY!

Notes

Papaya Salad
  • 3 cups green papaya, grated
  • 1 carrot, grated
  • 1 roma tomato, thin slivers
Toss together shredded papaya, carrot and tomato.  
Perfect With:  Peanut lime dressing, lettuce wraps, or as a refreshing side with any plant-based meal.
Peanut Lime Dressing:
  • ½ cup peanut butter
  • 2 tablespoons lime juice
  • 2-4 dates
  • 1-2 Jalapenos or Thai chilis
  • 2-4 tablespoons soy sauce
Whisk together peanut butter, lime juice, soy sauce,  dates and Thai chilis until smooth and creamy, then chill before serving.
