Red Lentil Bread
Savor the rich flavors of Red Lentil Bread, boasting protein-rich lentils and aromatic spices.
Ingredients:
- 2 Cups Red Lentils (Masoor Dal) (soaked for 1/2 – 1 hr)
- 2 Tablespoons Psyllium husk
- 2 Tablespoons Flax meal (powder) (Optional)
- 1-2 Tablespoons Lemon Juice
- 1 Teaspoon Salt
- 1 Tablespoon Baking Powder
Vegetable Options
- 2-4 cups Greens (finely chopped)
- 2 Carrots (finely diced)
- 1 medium Zucchini (finely chopped)
- 1/2 Cup bell peppers (finely diced)
- Herbs like (Cilantro, Parsley, Rosemary, Dil, Fennel, etc.,)
- Flavoring options – Mix & match (2 Tablespoon each)
Seeds & Nuts (2 Tablespoons each)
- Dry roasted cumin seeds
- Dry roasted fennel seeds
- Sesame seeds
- Sunflower seeds
- Pumpkin seeds
- Hemp seeds
- Chia seeds
- Jalapeños or green chilies (finely diced, to taste)
- Grind soaked lentils in a food processor or blender or with a stick blender to a thick batter like a thick bread batter. Set aside.
- Prepare greens & veggies. Add flavourings. Mix well to combine.
- Line loaf pan with parchment paper.
- Add baking powder . Mix well using cut and fold technique. Do not overmix. Pour into load pan immediately. Or roll into buns. Bake …or an inserted toothpick comes out clean.
- Bake at 350 for 45 mins to 1 hr.
- Cool completely before cutting into slices.
- Serve slices after toasting.
- Serve with avocado slices or hummus or tomato & basil, as open face sandwiches.
