Mexican Rice/Spanish Rice

Mexican rice is a dish typically made with white long-grain rice, cooked with tomatoes or tomato sauce, onions, garlic, cumin, and often other spices, giving it a distinctive reddish-orange color.

Ingredients
  

  • 1 Cup Brown Rice
  • 1 Cup Peas and Carrots fresh or frozen
  • ¼ Cup Water
  • ½ Onion diced
  • 4-6 Cloves Garlic diced
  • Jalapeno or Serrano diced
Spices:
  • 1 Tablespoon Taco Seasoning OR 1 Teaspoon of Paprika or Smoked Paprika
  • 1 Teaspoon Oregano
  • 1 Teaspoon Cumin Powder (dry roasted)
  • Salt to taste

Method
 

  1. Add diced onions in a stainless steel 3Q pan or in an Instant Pot. Saute for 3-8 mins adding a tablespoon of water at a time to deglaze the pan. Add Garlic and saute for 1 min.
  2. Add all the rest of the ingredients .
  3. For stove top cooking: Cover and cook on medium heat for about 10 mins. Once the water reduces to the top of the rice, lower heat to low and cook for another 15-20 mins. Let sit for 10 more mins.
  4. For Instant Pot: Cover and set to Manual 5 mins. Let it rest for 5 mins and quick release.
  5. Fluff with a fork to serve. (Do not overmix - it will become sticky)
